Ingredients
- • 2 sweet potatoes
- • 2 eggs
- • 1 tablespoon olive oil
- • 1 tablespoon pumpkin seeds or sesame seeds
- • 1 teaspoon lemon juice
- • salt and pepper
- • 100 g salmon (or chicken or tofu) optional
Method
- 1.Peel and cut sweet potatoes, then cook in boiling water for about 15 minutes
- 2.Drain and mashed potato with olive oil, salt and pepper
- 3.Cook the eggs for 6 minutes to obtain soft-boiled eggs, then cool them in cold water
- 4.Pan-fry salmon or protein if using
- 5.Serve the purée on a plate, then add the halved eggs
- 6.Add seeds and protein as an option
- 7.Add a squeeze of lemon before serving
